Braised Rosemary Veggies with Potatoes

Here is a great veggie dish that takes no time at all to prepare. Made with a bed of potatoes this dish is hearty and very filling. I made this the other night for a group of people and they raved about it REALLY. Actually, I was kind of surprised because this dish is so simple to make. Full of all the nutrition of potatoes and bell peppers this dish will do the body good. And the rosemary is amazing, it brings this dish alive and full of flavor. Ingredient:

3 - Pounds of Organic Red Potatoes - Sliced and Boiled Until Tender

3 - Large Organic Green Bell Peppers - Cut into Large Pieces

2 - Large Organic Red Bell Peppers - Cut into Large Pieces

1 - Head of Organic Cauliflower - Cut into Large Pieces

1 - Large Organic Organic Chayote - Cut into Large Pieces

2 - Large Organic Yellow Onions - Cut into Large Pieces

4 - Organic Veggie and Salt-Free Bouillon Cubes
12 - Oz of Organic Black Olives

12 - Cloves of Organic Garlic Minced

3 - Tablespoons of Fresh or Dried Organic Rosemary

1/4 to 1/3 - Teaspoon of Organic Stevia Powder - or a touch of honey can be used instead this adds a little sweetness to the veggies and offsets the rosemary flavor.

1 or 2 - Teaspoons of Organic Cornstarch or Arrow Root Powder

1 - Large Organic Tomato - Sliced for Garnish

Cook the potatoes ahead of time. Sometimes I even cook the potatoes the day before. Then in a large pot with just a little water at the bottom add all the rest of the ingredients. Braise turning constantly until a nice color is attained and everything is cooked through. This will take some time, but keep turning you dont want those veggies to burn.

Then, line the bottom of a 12 x 16-inch casserole dish with sliced potatoes.

Next, pour on the rosemary braised veggies and garnish with a few slices of tomato.

Cover with foil and pop into a 425-degree oven for 90 minutes. When you remove the veggies from the oven there will be lots of veggie stock at the bottom of the baking dish. Pour this stock out and thicken with a couple teaspoons of cornstarch or arrowroot and heat on the stove until the stock thickens up.

Next, pour the thickened stock over the veggies in the casserole dish.

(Optional) Add some Nutrient Yeast Powder on Top for a little bit of cheesy flavor and extra nutrition.

Let Cool and Serve

Serves 12 to 15 people or 6 hungry guys.
